How often are we able to adopt from the adopt tab? Is it once every month, or only for special events?

You can adopt every set of pets once every month. These sets will cycle out at the end of every month, and new sets will be released on the first.

There are also special events on which you can get extra pets, those are Birthday pets, or special releases. They are just available for a limited time.
